All of the ingredients used within this sake have been sourced locally from Yamagata prefecture.
So-ten has been brewed with 100% Dewanosato sake-specific rice, which was developed in the prefecture in 1994. It is recognised for its high acidity and low umami. In addition to this, local yeast, water, and brewers make this a truly Shonai-native sake.

Based in Shonai in Yamagata Prefecture, Kikuisami Brewery is located between Mt. Chokai and Mt. Gassan, with access to the excellent quality water of Akagawa River. Since 1897, the native brewers of Kikuisami have employed traditional methods to produce high-quality sake.
The name ‘36 Guardians’ originates from a traditional tale -
‘In the Middle Ages, while protecting a princess who had been chased out of the eastern provinces, the 36 vassals crossed the mountains and arrived at the Shonai Plain. There, they found peace, put down roots, and the town was born.’
