  • Think a pan-seared steak, Peking Duck, or dishes with mushrooms…

While beef was the brewers’ intended food pairing for this sake, duck is another great option. The acidity in Dragon of Oshu will cut through the fat and gamey flavours of duck, while the duck will bring out all the nuanced flavours in the sake.

An earthy, fatty dish featuring mushrooms will highlight the fruitiness of Dragon of Oshu.

  • Dragon of Oshu is not just a delicious sake; it’s also a sustainable creation with a focus on circular agriculture.

The nutrient-rich sake lees left after brewing this sake become feed for local Maesawa cattle. These well-fed cattle, in turn, contribute to fertilising the rice fields, where the premium sake rice is cultivated to make Dragon of Oshu.

Given how the famous Maesawa beef cattle plays a vital role in the sake’s production, Dragon of Oshu is made to be the ideal companion for meat pairings.

  • Founded in 1858, Iwate Meijo Brewery is located in Oshu city, home to the famous Maesawa Beef and Major League Baseball player, Shohei Ohtani. As the only sake brewery left in the city, Iwate Meijo aims “to be a company that is loved by the local people and can contribute to the development of the local community.”

In alignment with this mission, the brewery has cultivated valuable partnerships with local farmers, ensuring the production of high-quality sake-specific rice that rivals varieties from warmer regions of Japan.
