The higher levels of citric acidity in EIKUNholic are due to the 4MMP aroma compound, which is commonly associated with white wines (especially Sauvignon Blanc) but almost never found in sake!

Eikun Brewery was founded in 1881, a year which coincided with the signing of the Japan-UK Treaty of Amity and Commerce. This significant event inspired the brewery's name "Eikun," derived from characters representing the UK and Japan, symbolising the friendship and cooperation between the two nations. Given this origin story, Eikun Brewery is especially pleased to share their sake with people in the UK.
This is a terroir-driven brewery on a journey to brew a distinctly Shizuoka sake, using local soft water and locally produced sake yeast strains.
